Ingredients

1 cup chopped dates
¾ cup white sugar
1 tablespoon milk
1 stick butter
1 egg, well beaten
1 teaspoon vanilla extract
⅛ teaspoon salt
2 cups crispy rice cereal (such as Rice Krispies®)
½ cup chopped walnuts
1 (14 ounce) package sweetened flaked coconut (such as Bakers® Angel Flake®)

Directions

  1. Combine dates, sugar, milk, and butter in a saucepan and cook over medium-low heat until thick, 5 to 10 minutes. Set aside to cool.

  2. Add egg, vanilla extract, and salt to the date mixture, stir to combine. Add crispy rice cereal and walnuts and mix very well.

  3. Pour coconut into a shallow bowl. Shape the date mixture into balls and roll in the coconut.

Recipe Note

This is another recipe that mom made for us frequently, especially in the summer, because they are a 'no-bake' cookie and freeze well. We'd eat them straight out of the freezer and, man, were they good!
