Tofu Tuna recipe

Ingredients

2 tablespoons vegetable oil
1 onion, minced
2 stalks celery, minced
1 (12 ounce) package silken tofu
3 tablespoons mayonnaise
3 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon dill weed
1 (5 ounce) can tuna, drained and flaked, or more to taste

Directions

  1. Heat oil in a skillet over medium-high heat, saute onion and celery until softened, 5 to 10 minutes.

  2. Combine tofu, mayonnaise, lemon juice, mustard, and dill weed in a bowl, mash with a potato masher until tofu is smooth and mixture is combined. Fold tuna into tofu mixture.

  3. Stir tofu-tuna mixture into onion mixture, cook and stir until heated through, 5 to 10 minutes.
