Directions

  1. Preheat the toaster oven to 350 degrees F (175 degrees C) according to manufacturer's instructions. Coat a small loaf pan with nonstick cooking spray, dust with a dash of flour and tap out excess.

  2. Combine flour, baking soda, cinnamon, nutmeg, salt, cloves, and ginger in a mixing bowl.

  3. Blend pumpkin puree, sugar, oil, and egg in a separate bowl. Gradually add flour mixture until evenly incorporated, do not overmix. Pour into the prepared pan and sprinkle walnuts on top. Cover with foil.

  4. Bake in the preheated toaster oven until a toothpick inserted into the center comes out mostly clean, about 1 hour. Remove foil and continue baking until top is a deep golden brown, about 10 minutes more. Transfer to a wire rack to cool completely.
