⅓ green bell pepper, chopped
⅓ red bell pepper, chopped
⅓ orange bell pepper, chopped
¼ onion, chopped
1 ½ cups chopped fresh spinach
4 slices bacon, cooked and crumbled, or to taste
12 eggs
½ cup milk
salt and ground black pepper to taste
½ cup grated pepper Jack cheese, or more to taste

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray an 11x13-inch baking pan with cooking spray.

  2. Heat oil in a skillet over medium heat. Add bell peppers and onion, cook until soft, 5 to 7 minutes. Add spinach and bacon, reduce heat to low and cook until spinach has softened, about 5 minutes. Set aside.

  3. Whisk eggs, milk, salt, and pepper together in a large bowl. Mix in pepper Jack cheese and pepper mixture. Pour into the prepared pan.

  4. Bake in the preheated oven until eggs are set, 20 to 25 minutes. Remove from the oven and cut into squares.
