Directions

  1. Whisk eggs together in a bowl. Combine bread crumbs, black pepper, cumin, garlic powder, chili powder, and thyme in a separate bowl.

  2. Slice seitan into desired-size pieces. Dip each into egg mixture, then coat with bread crumbs, place on a plate.

  3. Heat olive oil in a skillet over medium heat. Arrange coated seitan pieces in the skillet, cook until crispy, 5 to 7 minutes per side.
