¼ cup olive oil, or more to taste
2 pounds mussels, cleaned and debearded
¾ cup Pinot Grigio wine
2 teaspoons minced garlic
1 teaspoon dried oregano
1 teaspoon dried basil
5 dashes hot sauce (such as Texas Pete®)
salt and ground black pepper to taste
½ cup prepared Alfredo sauce
¼ cup unsalted butter, cut into chunks
2 tablespoons grated Parmesan cheese
2 tablespoons grated Romano cheese, or more to taste
8 wedges lemon
8 sprigs fresh parsley

Directions

  1. Heat oil over medium-high heat in a large skillet. Add mussels and cook for 4 minutes. Stir in wine, garlic, oregano, basil, hot sauce, salt, and pepper, cover and cook until mussels have opened up, 3 to 5 minutes. Discard any mussels that have not opened.

  2. Reduce heat to medium, add Alfredo sauce and butter, and cook for 1 minute. Stir in Parmesan cheese and simmer for 2 minutes. Serve with grated Romano cheese, lemon wedges, and parsley.
