Prosciutto and Shaved Zucchini Pizza recipe

2 zucchini, peeled and shaved into strips with a vegetable peeler
¼ cup olive oil, divided
2 jalapenos, sliced
2 tablespoons lemon juice
¼ cup torn fresh mint leaves, packed
½ teaspoon salt
¼ teaspoon ground black pepper
1 (16 ounce) package fresh pizza dough
¼ pound sliced Monterey Jack cheese, or to taste
2 ounces prosciutto, torn into strips
¼ cup shaved Parmesan cheese, or to taste

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Place a pizza stone in the oven to warm.

  2. Mix zucchini, 2 tablespoons olive oil, jalapeno peppers, lemon juice, mint, salt, and pepper together in a bowl.

  3. Stretch pizza dough onto the warmed stone, brush top of dough with remaining olive oil. Lay sliced Monterey Jack cheese on top, cover with zucchini mixture, arrange prosciutto slices on top. Sprinkle Parmesan cheese over pizza.

  4. Bake in the preheated oven until crust is golden and cheese is melted, about 15 minutes.
