Ingredients

1 crusty French baguette, sliced thin
2 tablespoons olive oil
2 teaspoons coarse salt, divided
2 teaspoons ground black pepper, divided
1 (15 ounce) container ricotta cheese
½ cup grated Parmesan cheese
3 tablespoons chopped fresh basil, divided
2 ounces shaved Parmesan cheese
1 teaspoon truffle oil
salt and ground black pepper to taste

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Line bread slices on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with 1 teaspoon coarse salt and 1 teaspoon pepper.

  3. Bake in the preheated oven for 10 minutes. Remove from the oven and let cool, about 10 minutes.

  4. While bread cools, mix ricotta cheese, grated Parmesan cheese, 1 tablespoon basil, and remaining coarse salt and pepper together in a bowl.

  5. Spoon ricotta mixture onto bread slices and top with remaining basil and shaved Parmesan pieces. Finish by drizzling with truffle oil and top with additional salt and pepper.
