One-Skillet Chicken Burrito Bowls recipe

Ingredients

3 tablespoons olive oil, divided
¼ cup diced onion
1 pound boneless, skinless chicken breasts, cut into bite-size pieces
1 (5.4 ounce) package Knorr® Fiesta Sides™ - Mexican Rice
1 (15 ounce) can reduced-sodium black beans, rinsed and drained
1 cup shredded Monterey Jack cheese
½ cup pico de gallo

Directions

  1. Heat 2 tablespoon olive oil over medium high heat, add onions and cook and stir until they start to soften, 3 or 4 minutes.

  2. Season diced chicken with 1 teaspoon of kosher salt. Add chicken to pan and cook over medium high heat until chicken has started to brown, about 5 minutes. Remove chicken from pan.

  3. Use remaining 1 tablespoon olive oil to prepare Knorr® rice sides™ as directed on package. Stir in cooked chicken, black beans.and Monterrey jack cheese, heat through. Top with fresh pico de gallo.
