Directions

  1. Remove steak from the refrigerator at least 1 hour before cooking to allow it to come to room temperature. Season generously with salt and pepper.

  2. Preheat the oven to 200 degrees F (95 degrees C).

  3. Heat an ovenproof skillet over medium-high heat. Add butter. Sear steak for 2 minutes, flip and cook on the other side, 2 minutes more.

  4. Place steak in the oven and cook for 10 to 20 minutes, depending on steak thickness and desired doneness. Let steak rest for 10 minutes before serving.
