½ cup milk
2 eggs, beaten
3 tablespoons vegetable oil
1 cup finely shredded carrots
1 medium banana, mashed
1 cup whole wheat flour
1 cup bran cereal
⅓ cup granular sucralose sweetener (such as Splenda®)
¼ cup raisins
1 ½ teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
¾ teaspoon salt

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Coat 15 muffin cups with cooking spray.

  2. Whisk yogurt, milk, eggs, and vegetable oil together in a bowl. Fold in carrots and banana.

  3. Mix whole wheat flour, bran cereal, sucralose sweetener, raisins, cinnamon, baking powder, baking soda, and salt together in a separate bowl. Blend into the yogurt mixture until evenly incorporated.

  4. Fills each muffin cup 2/3 full of batter.

  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 12 minutes.
