1 (16 ounce) package ground turkey
salt and ground black pepper to taste
1 (15 ounce) can black beans
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 tablespoon cooking oil, or as needed
10 (8 inch) flour tortillas (such as Mission®)
1 (16 ounce) package shredded Cheddar cheese

Directions

  1. Brown turkey in a skillet over medium heat until no longer pink, 5 to 7 minutes. Season with salt and pepper, drain and discard any excess grease. Add black beans and diced tomatoes, cook until warm, about 5 minutes. Reduce heat to low.

  2. Preheat the oven to 300 degrees F (150 degrees C).

  3. Warm cooking oil in a skillet over low heat. Heat tortillas 1 at a time, about 1 minute each. Fill with turkey mixture, and top with cheese. Place burritos on a baking sheet.

  4. Bake in the preheated oven until cheese melts, about 5 minutes.

Got this recipe for ground turkey burritos while tinkering around in the kitchen. Thawed some meat that I didn't want to freeze again. It was simply great.
