Ingredients

1 cup raisins
1 ½ cups water
1 egg
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
3 teaspoons boiling water
½ teaspoon vanilla extract
½ cup butter, melted
1 cup confectioners' sugar
⅓ cup milk
1 teaspoon ground cinnamon

Directions

  1. Heat oven to 325 degrees(165 degrees C). Grease a 9 x 5 inch pan. Set aside.

  2. In 3 quart saucepan, boil raisins slowly water until there is 1 cup of water left and the raisins are plump. Allow mixture to cool.

  3. Stir in sugar and egg. Mix spices with boiling water and add to raisin mixture. Add flour, soda, vanilla and last, the melted shortening. Blend well. Pour into loaf pan.

  4. Bake for 40 to 50 minutes. When cool make glaze by mixing confectioners sugar, ground cinnamon, and milk. Spread on top of cooled cake.

Recipe Note

This cake is very moist, but my grandmother never added an icing. She made a cinnamon glaze.
