½ cup coconut flour
½ cup rice flour
1 tablespoon baking powder
1 tablespoon white sugar
1 teaspoon salt
2 eggs
1 tablespoon olive oil

Directions

  1. Preheat oven to 450 degrees F (230 degrees C). Line a pizza pan with parchment paper.

  2. Combine cassava flour, coconut flour, rice flour, baking powder, sugar, and salt in a large bowl. Whisk in eggs and olive oil. Add 1/2 cup water, mix until batter is the consistency of mashed potatoes, adding more water as needed.

  3. Spread batter on the lined pizza pan with a spatula.

  4. Bake in the preheated oven until dry, about 10 minutes.

Recipe Note

Basically what the title says. I put this together because I wanted a gluten-free crust that had the right texture. So many of the gluten-free recipes have a weird texture, different from gluten flour. I love making my own dough traditionally with regular flour...but gluten doesn't like me.
