1 cup mochiko (sweet rice flour)
½ cup white sugar
1 cup milk
½ cup water
2 tablespoons vanilla extract
2 tablespoons kinako (roasted soybean powder), or to taste, divided

Directions

  1. Combine mochiko and sugar in a large microwave-safe bowl. Stir in milk, water, and vanilla extract until smooth.

  2. Cook in the microwave at 1-minute intervals, stirring after interval, until mochiko mixture turns gelatinous, about 5 minutes.

  3. Dust a loaf pan with 1 tablespoon kinako, pour in mochiko mixture. Refrigerate until set, about 1 hour.

  4. Cut loaf into 16 pieces. Dust pieces with remaining 1 tablespoon kinako.
