Ingredients

1 (8 ounce) package dried rice noodles
2 tablespoons olive oil, divided
1 pound skinless, boneless chicken thighs, cut into 1-inch cubes
kosher salt and ground black pepper to taste
5 cloves garlic, minced
1 tablespoon freshly grated ginger
6 cups chicken stock
2 tablespoons hoisin sauce
1 tablespoon fish sauce
1 onion, thinly sliced
2 cups bean sprouts
½ cup fresh cilantro leaves
½ cup fresh mint leaves
1 jalapeno pepper, thinly sliced
2 limes, halved

Directions

  1. Place noodles in a large bowl and cover with hot water. Set aside until noodles are softened, about 15 minutes. Drain and rinse thoroughly.

  2. Heat 1 tablespoon olive oil in a large stockpot over medium heat. Season chicken with salt and pepper and place in the stockpot. Cook until golden, about 5 minutes. Set aside.

  3. Add remaining olive oil to stockpot. Add garlic and ginger. Cook, stirring frequently, until fragrant, about 3 minutes. Whisk in stock, hoisin sauce, and fish sauce. Bring to a boil, reduce heat and simmer for 10 minutes.

  4. Divide noodles between serving bowls, add onion, bean sprouts, cilantro, mint, jalapeno, chicken, and stock mixture. Top with limes.
