30-Minute Mashed Potato Pizza recipe

Ingredients

1 (13.8 ounce) can refrigerated pizza dough (such as Pillsbury®)
2 cups milk
1 (7.6 ounce) package mashed potato flakes (such as Hungry Jack®)
1 tablespoon butter
4 slices precooked thick-cut bacon, diced
4 cloves garlic, minced and divided
3 tablespoons olive oil
1 cup shredded mozzarella cheese
1 cup shredded sharp Cheddar cheese

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).

  2. Roll pizza crust onto a baking sheet.

  3. Bake in the preheated oven for 5 minutes.

  4. While crust is prebaking, combine milk and mashed potatoes in a microwave-safe bowl. Cook in the microwave for 3 minutes. Add butter, bacon, and 2 cloves of garlic, stir until creamy.

  5. Remove crust from oven and leave oven on. Combine olive oil and remaining garlic in a small bowl and brush on top. Spread 1/2 cup mozzarella cheese over crust and spoon dollops of mashed potato mixture on top. Spread remaining mozzarella cheese and Cheddar cheese over the pizza.

  6. Bake in the hot oven until melted, about 20 minutes.

Recipe Note

I had a version of this pizza at a placed called 'Bar' in New Haven and have since made my own quick and easy version that takes 10 minutes to prep and 20 minutes to cook. This pizza is extremely filling and delicious. It is also perfect for using leftovers.
